Brilliant Banana Bread – Serves 10
3 egg whites
3 ripe bananas, mashed
1/2 cup applesauce (I use a can of pie apples and blend them up to make a sauce)
Stevia, to taste (amount will depend on what type you use – I use 4 packets)
2 cups oat flour (can make your own with oats pulverized in a blender)
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1. Preheat the oven to 325 F/160 C.
2. In a medium bowl, beat the egg whites, and add the remaining wet ingredients – mix thoroughly.
3. In another bowl, mix the dry ingredients.
4. Lightly blend all of the ingredients together, and pour the mixture into a loaf pan.
5. Bake for 50 minutes, or until a toothpick comes out dry. Let the loaf stand in the pan for 15 minutes, before serving.

Serve it as Banana Bread Crumble, below, with 1/2 cup cottage cheese and sugar free maple syrup, or crumbled into chocolate whey protein pudding.
